Offering a true Canadian dining experience since 1925, casually elegant Papa George’s has maintained dedication to regional Canadian cuisine. This Jasper restaurant boasts ‘from scratch’ preparations of Alberta beef and wild game, fresh fish and local produce. Chef Jean Louis’ goal is to shorten the distance between farm and table. Steaks are cut on-site; sauces and desserts are housemade.


The dining room features the original two-sided rock fireplace and hardwood floors, a custom built open-to-view wine cellar, wine bar with small plates and granite counters, and a coffee café counter with baked treats to go or eat-in.

  • Breakfast: Granola-Yogurt-Fruit Sundae; Papa Skillet; Eggs Benedict; Stuffed French Toast; Wraps (15 ingredient choices); Canadian Bacon and Eggs Special
  • Soups and Salads: chef‘s daily soup creation; baked French onion soup; chicken Cobb salad with wild boar bacon; seared tuna kahuna
  • Fish and Chips; Shepherd’s Pie; Bison Chili; Lobster Mac and Cheese; Falafels; Empanadas
  • Burgers (wild game, Canadian, blackened Arctic char, veggie); Sandwiches (Reuben, cheddar turkey club, steak sandwich, roasted veggie)
  • Late Risers Breakfast (fried eggs, bacon, toast and French fries)

Dinner Menu Samples

  • Starters: daily soups; tomato mozza salad; lobster, prawn and mango salad
  • Appetizers: mussels; scallop and duck confit; calamari; boursin and fig crostini
  • Elk Striploin (peppercorn and whiskey sauce); Alberta Beef Ribeye Steak; Wild Boar Chop (forest mushroom blueberry sauce); Ribs (housemade BBQ sauce); Big Game Elk & Bison Meatloaf (wild mushrooms, red wine demi-glace)
  • Ruby Trout Filet (herb butter, almond pesto); British Style Fish and Chips (housemade coleslaw); Alaskan Black Cod (lobster and cream sauce)
  • Pasta and Rice: elk stroganoff; braised rabbit legs; smoked salmon penne; pan seared mushroom ravioli; spicy chickpea curry; big game cannelloni
