At the Fairmont Jasper Park Lodge’s Canadian themed Moose’s Nook Chophouse, the best cuts of locally raised meats (including AAA Alberta beef and bison), fresh seafood and seasonal farm grown produce are paired with the restaurant’s sommelier authored wine list of Okanagan and Niagara vintages to create an authentic Canadian gastronomic experience.


This Jasper restaurant features a rustic and cozy atmosphere, Canadian art, a large stone fireplace and genuine hospitality. In summer, try the private five-course chef’s tasting menu. The Moose’s Nook was recently named a TripAdvisor Certificate of Excellence 2016 Winner.

Menu Samples

  • Soups: spring pea and truffle soup; French onion
  • Salads: summer salad (compressed watermelon, pickled strawberry, goat cheese, pink peppercorn-cashew brittle); table side Caesar salad for two (double smoked bacon); Nook chopped salad (crisp iceberg, poached egg, stilton, sweet & sour cherry tomatoes, bacon vinaigrette)
  • Appetizers: shrimp cocktail; duck rillette; seared scallop and 15-hour pork belly; house cured salmon; ahi tuna tartar
  • Northern Grill Meats (seasoned with chef’s housemade Montreal steak spice and served with roasted shallot jus): signature on the bone 20-oz beef ribeye or 32-oz tomahawk carved tableside for two; 12-oz rack of lamb; 12-oz beef ribeye; 10-oz NY striploin; 6-oz beef or double smoked bacon wrapped bison tenderloin; 8-oz rack of venison
  • Sides: creamy mashed potatoes; three-cheese mac and cheese; hand cut fries with house ketchup; cauliflower and broccoli with aged cheddar béchamel; asparagus with béarnaise; roasted BC mushrooms; citrus-thyme glazed carrots
  • Baked Lentil Cake: foraged mushrooms, seasonal vegetables, carrot citrus purée
  • Pan Seared Sockeye Salmon: Parisienne gnocchi, celeriac purée, sauce vierge
  • Herbs and Parmesan Stuffed Chicken Supreme: roasted carrot barlotto, foraged mushrooms, chicken thyme reduction
  • Soy Marinated Sable Fish: konbu broth, beluga lentils, shiitakes, braised leeks
  • Brome Lake Duck Breast: duck leg confit, citrus beet root purée, walnuts, citrus duck jus
  • 10-oz Signature Prime Rib: Yukon gold mashed potatoes, glazed carrots, horseradish tomato jam, Yorkshire pudding, roasted shallot jus
